Sylvain & Béatrice Bzikot (pronounced Zee-cot) owns an impressive estate of 15 hectares in Puligny Montrachet. Sylvain’s grandfather, Joseph, created the domaine from the 1940s after emigrating from Poland with nothing but the clothes he stood up in and immediately practiced polyculture (vines and animals) in Meursault. In the following years, he began to devote himself only to the vineyards by moving to Puligny Montrachet. Joseph's son Stanislas followed and since 1995 the grandson Sylvain has continued the work by keeping all of the fruit that in prior years were sold to Domaines like Dujac and bottling everything in the Domaine. The average age of the vines today is 55/65 and are farmed by Sylvain in an ecologically minded approach with no pesticides and or chemicals and resorting only to organic compounds as needed. All the grapes are picked by hand and carefully sorted in double assortment tables to guarantee only the healthiest grapes. A producer who many locals, such as Julien Wallerand, consider one of the shining stars of Puligny today.
The Sylvain Bzikot Bourgogne Blanc is made from a combination of half Puligny-Montrachet and half Mercurey fruit. This used to be sold exclusively in France until only recently. In the glass, this wine combines the precision and finesse of Puligny with the fleshy, sturdy qualities of Mercurey. Lots of crushed rock minerality here, along with fresh apple, and salty citrus notes.
